With all the Christmas pudding, rich fruit cake, chocolates, cream and all the other lovely but quite unhealthy things, a fruit salad can be an excellent tonic. The problem being, of course, finding decent fruit in season. This Boxing Day, we had a winter fruit salad which would have been the healthy alternative, had it not been for the fact that we had it along with the pudding and pavlova rather than instead of. Oh well, not to worry.
Winter fruit salad
3fl oz pomegranate juice (the 'pomegranate juice drink' from the supermarket, though a little watery, is fine for this)
2 oz sugar
2 crushed allspice berries
1 pomegranate
3 clemantines
1 pear
A handful of little red grapes
A small handful of dried cranberries
Put the pomegranate juice, sugar and allspice berries in a saucepan over a medium heat to make a light stock syrup. Bring to a boil for a few minutes and set aside until cool.
Halve the pomegranate through the equator, and bash the skin with a wooden spoon - it releases all the seeds and juice without the pith! Peel the clemantines with a sharp knife and cut out the segments over the bowl. Squeeze any remaining juice from the left-over core of the fruit into the bowl. Peel, quarter and slice the pear, halve the grapes and throw in the cranberries.
Strain the stock syrup into the bowl, mix well and set aside for a while to allow the flavours to mingle.
Any left-overs make a great and healthy breakfast!
